White Tea: A Delicate Elixir of Youth

Visually, white tea differs from its black, green, and oolong counterparts due to its pale yellow hue after infusion. Flavor-wise, it stands out for its light, non-bitter taste that can pleasantly surprise even those least accustomed to tea’s flavor.

Originating in China, specifically from the famous Fujian province, white tea is believed to have been made using traditional methods dating back to the Ming dynasty in the 16th century. Other Asian countries like India, Indonesia, and Nepal also produce excellent white teas. At Betjeman & Barton, our white teas have either Chinese or Nepalese origins, showcasing our tea house’s century-old expertise. How Is White Tea Made?

Like other teas, white tea comes from the Camellia sinensis plant, a small tree with great powers. However, only the tender buds and young leaves are used to produce this tea, which gets its name from the silvery fuzz that covers the buds and leaves when harvested. The harvest takes place in early spring, followed by withering and drying.

The withering process is traditionally done outdoors or in tea barns, depending on the weather. To make a good quality white tea, the moisture content of the buds and leaves must drop below 20% after withering.

The drying process is carried out in a hot-air dryer, on trays, or in basins to reduce the moisture content to less than 5%. While withering can take up to three days, drying lasts less than an hour. White tea is exceptional in that it undergoes the least oxidation and thus has the lowest caffeine content compared to other tea types.

Finally, the white tea is hand-sorted and ready to be infused and enjoyed. Made with the utmost care and respect for an ancient craft, it is also best enjoyed according to traditional methods.

How to Enjoy a Cup of White Tea?

White tea is perfect for any time of day. Brew it in water at a low temperature, between 75°C and 80°C (167°F and 176°F), for about 5 to 10 minutes to preserve its qualities and flavor.

White tea, when brewed for a longer period, is generally less stimulating than other teas, especially since its lower infusion temperature limits the release of caffeine. It is enjoyable at any time, whether in the morning, during tea time, or in the evening. Its light fragrance pairs wonderfully with pastries and other sweet treats.
